Heart of Gold red velvet Valentine cake

This began as an experiment, more or less. I’ve been seeing some really fabulous looking metallic cakes in pinterest, which inspired me to give it a whirl.   With Valentine’s Day coming up, the timing couldn’t have been more perfect. A Heart of Gold Valentine Cake, I decided, was exactly what the hubs was craving this year.

But before I could begin, I needed to do a little research. The problem is, I couldn’t find a single metallic cake that wasn’t professionally made with fondant. I had to get inventive. After much thought, I finally landed on red velvet because…well, it is seemed the obvious choice, paired with a cream cheese glaze. A glaze, as opposed to a traditional frosting, would be would be the best way to get a smooth, shiny surface.

Let’s be honest, the post isn’t really about the cake, it’s about the icing. Now let’s get REALLY honest. My cake came from a box (gasp!). The thing is, I didn’t have time to make it homemade, and that’s exactly what those handy dandy Betty Crocker-in-a-box mixes are for. No one noticed the difference, and I always love when I can create something that looks like it takes hours, but really it’s super quick and easy (but if you’re intent on going all out, this red velvet cake recipe is delish).

Simply bake your cake in a heart shaped pan, then you’re ready for the next step.

Heart of Gold Cream Cheese Glaze

Ingredients

  • 4 ounces cream cheese, room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 to 4 tablespoons milk
  • Wilton Gold Pearl Dust
  • Wilton Icing Colors in Golden Yellow
Directions
  1. Beat cream cheese until very creamy. Beat in powdered sugar. Stir in vanilla. Add 3 tablespoons milk. Totally combine. Add more milk to get desired consistency.cream cheese glaze heart of gold valentine cake recipe
  2. Add gold icing color in very small increments (I scraped tiny amounts to the side of my beater, then blended). Seriously, this stuff is potent. Use very small amounts at a time. Once desired hue is reached, blend in half of the pearl dust, reserving the rest for later.
  3. Once your cake has completely cooled, line a cake plate with strips of wax paper and place the cake in the center.2012-02-07_23-52-50
  4. Carefully drizzle about a third of the glaze over the top. Using a rubber scrapper or spatula, lightly spread the glaze so the entire cake is coated. Refrigerate for 10 minutes, then repeat the glaze over the cake. Continue until the cake is completely coated and smooth, refrigerating for 10 mintes between each application.   5. Once cake is completely glazed, sprinkle the remaining pearl powder evenly over the cake. Refrigerate for one hour, until glaze has hardened. Remove wax paper strips and get ready for some oohs and ahhs!
