Spice Rubbed Slow-Cooker Chicken and Vegetables

Spice Rubbed Slow-Cooker Chicken and Vegetables

Ingredients

  • 1 5-6 lb chicken - giblets removed, rinsed, and patted dry with paper towels
  • 1 white onion sliced
  • 1 tsp sea salt (optional)
  • 2 tsp paprika
  • 1 tsp cayenne
  • 1 tsp white pepper
  • 1 tsp poultry seasoning
  • 1 tsp garlic powder
  • 1 cup sliced or baby carrots
  • 2 cups red potatoes, cubed

Instructions

  1. Cover the bottom of a large crock pot with the sliced onions.
  2. Remove giblets from the chicken, rinse, then pat dry with paper towels.
  3. Mix salt, paprika, cayenne, white pepper, poultry seasoning, and garlic powder in a small bowl.
  4. Using your fingers, rub the spice mixture all over the whole chicken.
  5. Place the spiced chicken on top of the onions in the crock pot. Add carrots and potatoes to the sides of the chicken. Cover and cook on low for 5-6 hours (depending on your crock pot).
  6. Arrange veggies and chicken on a platter and serve.
  7. Note: Chicken does not need any liquid when roasting in a crock pot, since it creates it's own juices.

    How long would I need to cook it in my Crock Pot on high? I actually have it in my CP now, and I used a good part of my time looking for the neck and giblets (that weren’t there lol). I am just going by 2 1/2 hrs and then checking it or possibly turning back down to low. Any suggestions??

    I made this tonight & it was fabulous! I have made another recipe for a whole chicken in the crock pot, but it fell apart & this one was very moist & tender but still maintained its shape so that it wasn’t just shredded chicken. One note: we don’t eat the skin, so I put the spice rub under the skin in addition to i
    On top of the skin.
