With summer in full-swing, I felt it was high time to whip out the ice cream maker. Store-bought ice cream never does compare to the homemade stuff, and newer ice cream makers make the process surprisingly quick and easy.
Ever since I tasted authentic thai coconut ice cream from our favorite thai restaurant a couple years ago, I’ve been all about it. As my luck would have it, coconut ice cream is actually kind of hard to find at a grocery store, unless you want to pay boo koo bucks for it. {Yet another reason to just make it yourself}. If you’re still not sold, how about this for a cherry on top: when you make your own ice cream, you have complete control over the fat and sugar content. Seeing as how it’s swim suit season and all, I’d say that’s the best news, yet, especially since the non-returnable swim suit I ordered online unexpectedly came with the teeniest bikini bottoms I’ve ever attempted to squeeze into. This girl can’t afford any extra cream in her ice cream. It’s all good though because this recipe doesn’t call for any cream, and yet it’s still the tastiest coconut ice cream I’ve ever tried.
I scooped my ice cream into cute little mason jars, which works out just perfectly when served with 2 spoons and a sprinkling of toasted coconut. Give it a try, you’ll thank me, I promise.
Ingredients
- 2 cans unsweetened coconut milk
- 1/2 cup cane sugar (or substitute brown sugar)
- 1 teaspoon vanilla extract
- 2 1/2 cups sweetened coconut, lightly toasted (optional)
Instructions
- Add coconut milk and cane sugar to a pot and warm over medium heat until sugar is dissolved. Remove from heat.
- Stir in vanilla extract.
- Pour into an airtight container and chill in refrigerator until cold.
- Process ice cream mixture in your ice cream maker, according to device instructions.
- Spoon into airtight containers and freeze until solid, minimum 1 hour.
- Serve with toasted coconut sprinkled on top.
