Well friends, it’s unofficially summer! Although I don’t have any big plans yet, I know whatever I’ll be doing will involve some of these icy mango mojitos. Refreshing splashes of lime and mint get a jazzy, unexpected kick from scoops of mango sorbet. They’re the perfect accessory to a lazy summer afternoon by the pool, barbecuing with friends, cozied up with a book, and if all goes according to plan, all of the above!
Here’s how I made it…
Step 1: Squeeze a fresh lime into a shaker, discarding the peel.
Step 2: Add sugar, fresh mint and rum and muddle the crap out of it, until all the sugar has dissolved. Add ice and shake until freezing cold.
Step 3: Pour the contents of the shaker (ice included) into a sugar-rimmed tumbler. Top with a decent quality ginger ale (next time, I won’t use diet ginger ale. It left a funny taste).
Step 4: Finish it off with scoops of mango sorbet (I used a melon baller) and garnish with fresh lime slices and mint sprigs.
Next time, I may sacrifice the pretty presentation and try adding the sorbet to the shaker so it mixes more with the rum and mint. What do you think? Is this one a must-try for summer?
