Okay, so maybe a whole entire cobbler each day would mean a very undesirable end to that sentence. But what about a teeny tiny individually-sized cobbler, warm and bubbling, whenever you please?
As we settle into October, the hubs and I are finding ourselves reaching for our favorite comfort foods. And while it would be so easy to indulge every single night while bundled up on the couch, I don’t think my body or my skinny jeans would be so appreciative. In my experience, the trick to surviving cold weather comfort cravings is to allow everything in moderation, while using fresh, wholesome ingredients whenever possible. That’s why these portion-controlled cobblers are our new go-to dessert. Fresh fall fruits, topped with a sweet crumble topping (which I store in a ziplock in my freezer) can be dished up into small ramekins and popped into the oven on a moments notice.

When making these cobblers with peaches, I’ve found you don’t have to add any extra sugar to the fruit, however tart raspberries could use a light dusting of brown sugar.
{Tip: submerge peaches in boiling water for about 30 seconds, then rinse with cold water. Skins should easily peel off with a paring knife.}

Serve it up à la mode, and you’ve got yourself a restaurant-worthy treat, without having to brave the elements (or in my case, traffic).
Ingredients
- 2 1/2 cups of flour
- 1 1/4 cup of sugar
- 1/2 cup of brown sugar
- 1/4 teaspoon of salt
- 2 sticks of cold butter
Instructions
- In a mixer combine flour, sugar, brown sugar and salt, using the paddle attachment, on low speed. Add butter one Tablespoon at a time until the mixture sticks together and forms coarse crumbs. Store in the freezer until ready to use.
- To Make the cobbler, preheat oven to 350 degrees. Place chopped fruit in the bottom of a small ramekin, and add a light dusting of brown sugar if you'd like. Sprinkle the top of the fruit with cobbler crumble and bake for 15-20 minutes, until the cobbler begins to bubble and the top starts to lightly brown. Serve immediately.
