This fresh Arugula Salad is a seasonless staple and an easy way to add lots of vitamins, omega-3s (good fats) and fiber to any meal. Whenever I do salads, I tend to toss in things I already have in the fridge, but these ingedients and flavors mixed so well, they were worth taking special note of:
Arugula Salad
Ingredients
- Baby arugula
- 1 Cucumber, sliced
- 2 Carrots, sliced
- 1/2 pint grape tomatoes, quartered
- 1 Avocado, cubed
- handful of candied walnuts
- Crumbled goat cheese, to tastle
- White balsamic dressing, to taste
Combine first 6 ingredients in a large salad bowl. Drizzle white balsamic dressing on top, toss to coat. sprinkle with crumbled goat cheese to garnish.
